Default HTML 4.01 Strict vs. XHTML 1.0 Transitional

I have an old site that I would like to update and I have been learning Dreamweaver CS4 for the purpose of doing so. This has had me watching TONS of tutorial videos. In one, the instructor stated that new pages should be created using a DocType of HTML 4.01 strict but he did not give any indication as to why. The default in Dreamweaver CS4 is XHTML 1.0 transitional and this is what most of the other videos seem to use.

What are the pros and cons that I should be considering and what do you suggest?

Decide on one, and use it. Validation is not required for ranking on Google. It is a matter of professional pride - that we do things right. We should be doing things right for Google regards SEO, and doing things right for HTML by producing valid code to some standard.

Personally, I like the idea of validating to the latest standard. The latest at the moment is related to xhtml rather than html.

But when I seo a website, I take what I am given. I often try and validate a few things, and check that the validation is not messing around with seo - like I have found two head sections, or two bodies, or two meta descriptions...

Dreamweaver???

I like doing code the old fashioned way, line by line html, or within a CMS that I also have line by line control over. And all in PHP that creates the HTML / XHTML etc.

Thanks for the response, and I know that all of the various programs, including Dreamweaver, have their problems. But I am not trained in web development and find that these kinds of programs help me learn code. And as I learn, I do more an more by hand.

And these kinds of programs also come equiped with some features that help speed up the development process...
